Don's unyielding ardour for locally sourced bounty and succulent seafood is infectious. He delights in divulging the splendour of produce cultivated, reaped, and reeled in from Carnarvon and the entire Gascoyne region. Over a span of a decade, Don has been an integral part of the Taste of The Gascoyne and Gascoyne Food Festival. In 2019, his profound commitment was celebrated through the inaugural Gascoyne Food Hero Award, shared with the legendary Kel Brown of Nor West Seafoods.
In recent chapters, Don's expertise has entwined with the Indigenous culinary realm. He harmonises native ingredients with local products, engaging with Indigenous hospitality workers and students in Kimberley and Mid-West regions. This vibrant fusion of knowledge and presentation prowess extends to the Indigenous students pursuing their Certificate II in Hospitality at Gwoonwardu Mia.
