From Carnarvon to Exmouth: The Flavours of the Gascoyne Continue

The 2025 Gascoyne Food Festival is almost here, with celebrations of food, culture, and community kicking off in Carnarvon on Saturday 26 July. This vibrant opening chapter sets the stage for a month of unforgettable experiences — and then the festival journey heads north to Exmouth, where even more flavours, stories, and coastal charm await.


From Friday 8 August to Saturday 16 August, Exmouth will host four extraordinary signature events that showcase the very best of the Gascoyne’s produce, people, and hospitality.



Spice things up with vibrant Mexican-inspired bites and fresh local seafood at The Shack’s Mexican Seafood Fiesta. Set against Exmouth’s laid-back coastal vibe, live music, and festive atmosphere, this is the perfect way to experience the Gascoyne’s world-class flavours with a twist.


The menu is bursting with creativity and regional freshness: think smoked mackerel crostini drizzled with chipotle hollandaise, tender Bullara slow-cooked beef bites with beetroot and goat’s cheese, and delicate Shark Bay scallops brightened with a mango salsa. There are also creamy crab and dill blinis, prawn tostadas piled with guacamole and pico de gallo, smoky vegetable nacho boats, sweet potato-stuffed jalapeños, and tiny zucchinis filled with Mexican bean rice and chipotle crema. Pair it all with Margaritas, Palomas, Mango Daiquiris, Mexican Punch, or a Carajillo — the Mexican espresso martini — while you soak up the beachside vibe and live music.



Celebrate the Gascoyne’s land and sea under the full moon at this exclusive dining experience at Mantarays Ningaloo Beach Resort.

As the sun sets over the Indian Ocean, guests are welcomed with Voyager Estate sparkling wine and invited to watch our chefs prepare freshly harvested shellfish over an open fire right on the beach — a magical start to the evening. After canapés and drinks on the sand, you’ll be seated for a shared-style feast that showcases the finest meats, seafood, and seasonal produce the Gascoyne has to offer. Each course is thoughtfully paired with Voyager Estate wines, Whalebone’s famous brews, or refreshing non-alcoholic options. All of this unfolds with live music and the sound of waves under the moonlit sky, creating a truly unforgettable night.

End your Exmouth Festival experience with a bang at the Whalebone Hoedown, a lively celebration of Gascoyne hospitality and community spirit.

The fun begins at 4:00pm with horses greeting guests between 5:00 and 6:00pm. The Bonehouse Band gets everyone dancing at 6:00pm, with line dancing led by Madie Doe from 7:30pm. Awards will be given for Best Dressed Cowgirl and Cowboy, Best Dancer, Loudest Yeehaw, and more!


The hearty menu begins with canapés like blue corn tortilla chips with queso, goldband ceviche, and charred veggie salsa, alongside bacon-wrapped Texas Twinkies filled with cream cheese and smoked Bullara beef, plus golden-fried mac ‘n’ cheese balls with herb aioli. Shared pizzas include irresistible combinations such as local tiger prawns with basil oil, smoked Bullara beef with bourbon BBQ sauce, Mundilya goat with pear and gorgonzola, and a veggie patch version with honey-roasted butternut, feta, and pesto. There are gourmet sliders too — featuring smoked Bullara beef with pickles and slaw, Mundilya lamb kofta with tzatziki, and grilled eggplant with haloumi and tomato salsa. For the kids, the Lil’ Wranglers menu keeps it classic with cheesy pizzas and mini burgers, and dessert rounds out the evening with creamy, locally made ice cream.



Running alongside the festival, the Taste of the Gascoyne Food Trail invites you to discover participating eateries all across the region, each serving up signature dishes that highlight the best of local produce.
